Indonesian Recipe : GEPLAK

Geplak is a sweet snack made from equal parts coarsely grated coconut and sugar, in equal amounts, often colored brightly. Some versions include rice flour, citrus leaves and/or waluh fruit. Geplak is mainly produced in Bantul, a city in Yogyakarta, Indonesia.

Ingredients:
  • 1 cup grated dry coconut
  • 3 / 4 cup water
  • 1 1 / 2 cup granulated sugar
  • Food coloring, optional
  • Essence, optional

How to:

Combine all ingredients except the essence if using, in a saucepan.
Prepare a baking pan size 10x15x4cm, aluminum foil base give exaggerated on the long side (so you can easily remove).
Cook over medium heat until sugar dissolves. If the dough begins to thicken, reduce heat. Cook until the water is low, the sugar dries.
Give essence if you want.
Pour batter in pan, press to flatten and compact. Chill (1-2hours).
Lift from pan. Cut to taste to use a sharp knife.
